I know we are technically still in summer but in Ireland the Autumn tends to creep in fairly early so I start to crave warm hearty dishes to beat the damp cold weather. I saw this recipe and decided to give it a try. I made a few changes but really loved the finished product.
1lb. Ground Beef
1 cup Onion
2 cups Brocolli, minced
2 Bell Peppers, (any colour) chopped
15 oz. Diced tomatoes
15 oz. Tomato Sauce
500ml Beef Stock
1/2 tsp Dried Basil
1/2 tsp Dried Oregano
1 clove Garlic, crushed
Sea Salt and Ground Black Pepper to season
Brown Frusilli or penne pasta (optional)
~Melt cooking fat in skillet and place over medium heat. Add onion and garlic and cook for 1 minute.
~Add beef to the skillet and cook until meat is brown
~Place the beef, onion and garlic in a slow cooker
~Add all the remaining ingredients, season to taste and stir well
~Cover and slow cook on low for 6 to 8 hours
~I added some pasta to mine which I added once the soup was cooked but if you choose to leave out the pasta then it is ready to serve.
