Blackened Chicken with Strawberry & Salad

I love this tasty chicken with strawberry salad. It’s pretty quick to put together too. I added some spicy wedges to accompany mine as I love my carbs!

 

INGREDIENTS

4 x Boneless skinless Chicken Breasts
8 x cups of Spinach & Mixed greens
1lb Strawberries
1 tbsp Paprika
1 tsp Chilli powder
1/2 tsp Oregano
1/2 tsp Garlic powder
Sea salt & ground black pepper

INGREDIENTS for STRAWBERRY VINAIGRETTE

1 lb Strawberries, chopped
Juice of 1/2 lemon
1 tbsp Balsamic vinegar
2 tbsp Olive oil
Sea salt & ground black pepper
2 tsp honey ( optional )

TO MAKE
~ Preheat the grill to medium high
~ Mix paprika, chilli, oregano, garlic powder in a bowl & season with salt and pepper to taste.
~ Season the chicken breasts on both sides with the paprika mix.
~ For the vinaigrette, mix the strawberries, honey and lemon juice in a saucepan placed over a medium heat.
~ Bring to the boil, reduce the heat and let simmer for 8 to 10 mins.
~ Blend the strawberry mixture until smooth and let cool, slowly add the balsamic vinegar and olive oil, whisking continuously and season.
~ Place chicken breasts on the preheated grill and cook for about 5 – 8 minutes on each side.
~ In a bowl, toss all the remaining ingredients.
~ Serve the chicken with salad and drizzle with the strawberry vinaigrette.
