Ok I may be a bit pancake obsessed but when I saw this Coconut Pancake recipe….well I had to try it!
• 1/4 Cup Coconut Flour
• 1/4 Teaspoon Baking powder
• 1/2 Teaspoon Maple Syrup
• 3 Eggs
• Fruit of your choice and Coconut cream to accompany
• Coconut oil
• A pinch of salt (optional)
~ Beat the eggs in a bowl
~ Then mix in the coconut flour, baking powder, maple syrup and salt (if using) into egg mixture and mix well.
~ Melt coconut oil in the pan and then add some pancake mixture.
~ Cook the mixture for 2 minutes on each side and then serve with fruit and coconut cream.
These are really quick and easy, all the ingredients should be easy to source. The coconut flour can be gotten from most health food stores.
