So I tried this paleo chicken recipe recently,it has a very Italian flavour with the balsamic, tomato and basil. It has quite a tangy flavour so hope you enjoy!
• 4 Chicken breasts, boneless, skinless
• 1 Garlic clove, minced
• 1/3 cup Balsamic vinegar
• 2-3 Pears, sliced
• 2 cups diced tomatoes
• 4tbsp. Fresh basil, sliced
• coconut oil
• sea salt & black pepper
~ Melt some coconut oil in a pan over medium heat
~ Season the Chicken breasts to taste, then brown on both sides for about 3 minutes, then set aside.
~ Add garlic to the pan and sauté
~ Pour in the balsamic vinegar and cook til reduced by half
~ Stir in the pears and tomatoes and return the chicken to the pan. Lower the heat to medium and cook for about 10 minutes.
~ Top with fresh basil to serve.
You can add onions to it also but i don’t eat them so didn’t put them in.
